In 2024 Ngāti Raukawa chef Matt Burgess will bring Māori culinary nous to upmarket London department store Fortnum & Mason, founded in 1707. His plan is to host supper clubs at the store with a strong Māori influence. The Wellington-born and raised chef has worked in London since the late 1990s and learned his craft alongside kitchen luminaries such as Gordon Ramsay.
